Lucas’ Konigsberger Klopse

Meat Ingredients: 1 lb ground, 1 roll (soaked), 1 lg onion (diced), 2 tbsp bread crumbs, salt & pepper, 2 eggs

Stock Ingredients: 1 L broth, 1 lg onion (diced), 1 bay leaf, 3 peppercorns, salt

Sauce Ingredients: 3 tbsp butter, 2 tbsp flour, 1 tbsp sugar, 1 tbsp lemon, 380 ml broth, 125 ml cream, 1 egg yolk, parsley, salt & pepper, capers

 

Meat: knead until smooth, add bread crumbs for balls (golf ball size)

Stock: mix and warm, simmer meat balls for 10 min, keep stock warm but remove meat balls, bay leaf and peppercorns

Sauce: warm butter, add flour, add to stock, fold in drained capers, add seasonings, add egg yolk to thicken, add meat balls and parsley to serve
