Luis’ Kaiserschmarrn
5 eggs
50 g sugar
250 g flour
400 ml milk
50 g melted butter
Salt
Lemon peel
100 g raisins (optional)
Cooking fat
Beat egg yolks with sugar until foamy. Slowly add flour, milk, butter, salt, lemon peel and raisins.
Stir in stiff egg whites.
Place dough in plenty of hot fat and bake gently, tearing into pieces with two forks while cooking until golden on both sides
Top with sugar and cinnamon.
