Victor’s Welsh

Serves 3 people:

600 g cheddar cheese

20 ml brown beer

3 slices bread

3 slices ham

3 eggs

3 spoons mustard

Pepper

Pour a bit of beer on each piece of bread, spread with mustard and top with slice of ham – place in oven proof dish.

Cut cheese into cubes and melt, add beer, pepper and a spoon of mustard – stir well and pour over bread.

Bake for 10-12 minutes at 210C

Fry 2 eggs to top the Welsh and serve.
