Catherine’s Quinoa Muffins

2 cups quinoa cooked

1 c chopped spinach

1 c chopped ham or bacon

4 eggs

1 c chopped bell pepper

¼ cup parsley

Salt & pepper

½ c parmesan

1 c grated cheddar

 

Preheat oven to 350F – mix ingredients well – place in greased muffin tray.

Bake for 15-20 minutes for medium size (12 muffins) or 25-30 for large size (6 muffins).
