Rasmus & Anne’s Indian Veggie Curry

2 tbsp olive oil

1 large onion (diced)

4 cloves garlic (minced)

1 tbsp ginger (grated)

Curry, turmeric, cumin, cayenne, coriander, cinnamon

1 tbsp tomato paste

2 c vegetable broth

1 c coconut milk

1 head cauliflower/broccoli

4 sweet potatoes

3 tomatoes

1 c frozen peas

2 c frozen spinach

2 tbsp lime/lemon juice

Salt & pepper

Basmati Rice

 

1.       Fry onion, garlic, ginger, spices and tomato paste.

2.       Add broth and coconut milk – bring to a boil.

3.       Add vegetables and simmer for 20-25 minutes.

4.       Season with lemon juice, salt and pepper

5.       Serve over rice
